Since 2019, Underground Meats has partnered with the Wisconsin Pastureland Coop, a group of family-run farms in the Driftless area with deep, generational ties to the land and to agriculture. These families have farmed the land for generations, passing down their knowledge and commitment to sustainable practices that protect the environment and produce exceptional quality pork.
The farmers of the Wisconsin Pastureland Coop raise their heritage breed hogs on open pastures, where the animals thrive in a natural environment without the use of antibiotics. This approach not only benefits the land—by promoting soil health, biodiversity, and responsible stewardship—but also results in a superior product. The pork from these pasture-raised hogs is rich in flavor and quality, ensuring that our salami is something you can feel good about enjoying.
We work closely with these family farms to supply Underground Meats with 30-40 hogs each month, allowing us to create salami that reflects our shared commitment to sustainability, quality, and respect for the land.
