Our dry-cured bacon is made by rubbing it with salt and brown sugar and black pepper, then letting it dry cure for 15 days. This process may take longer and cost more, but it results in a bacon with intense flavor that doesn't shrink when cooked. We smoke it over hickory for 24 hours to enhance the sweet and savory taste.
